I am happy to report that I have made it through the first two days of my Whole 30! Woohoo! I keep having to remind myself that part of the purpose of this is to simplify, and just eat clean, good foods. As with most things, I tend to over-think it! I feel really good and my energy levels have been normal. Both days I have had three meals and one snack. I have felt pretty satisfied and not hungry between meals, as I sometimes am. So far, I have kept it pretty simple, but I hope to try some new things in the coming weeks. I’m super curious about trying all these new fats, like ghee and coconut oil. By the way, ghee, which is clarified butter, is wonderful on lots of foods. I’m learning so much as I go! Here is what I have eaten the past two days, in case you were curious….not sure if I will post all my food diaries throughout this whole thing, I don’t want to completely bore anyone! But, here it is (and on the left, pics of a few meals, too):
Day 1: Breakfast–2 eggs cooked in ghee, sliced tomatoes, 1/2 avocado, black coffee, banana Lunch–chicken breast, sweet potato with ghee and cinnamon, sliced cucumbers Snack–grapefruit and almonds Dinner–Green salad with lots of veggies and salmon fillet
Day 2: Breakfast–2 eggs, spinach, mushrooms cooked in ghee, black coffee, banana Lunch–chicken breast, guacamole make with 1/2 avocado, tomatoes, lime, garlic, and onion Snack–-apple and almonds Dinner—PaleOMG’s Tomato Cream Chicken Sausage “Pasta”…AMAZING and EASY to make, you have to try it! I checked and was almost 100% sure it is Whole 30 compliant…hopefully, I am correct! Seriously, click on the link for the recipe! So flavorful!
