The Macho Salad @honorbardallas 🤩🥗 is an all time favorite! I crave it often, so had to re-create it at home! Thankfully its super easy to prep a single serving or a salad large enough to share…an easy summer dinner idea!⁣
⁣
👉🏼It has all the elements of a perfect salad: crunchy, creamy, tangy, and a little sweet, thanks to fresh @ndmedjooldates, finished with a refreshing citrus vinaigrette! AND-it’s a balanced, nutrient dense meal that’s oh so satisfying🙌🏼⁣
⁣
𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀: ⁣
(for a single serving)⁣
⁣
For the Salad:⁣
•2 cups lettuce of your choice (I used a mix of red leaf, green leaf, and romaine)⁣
•Handful of cherry tomatoes sliced lengthwise⁣
•1/4 cup fire roasted corn (canned)⁣
•1/4 cup goat cheese crumbles⁣
•1/4-1/2 diced avocado⁣
•1/2-1 full cup shredded rotisserie chicken ⁣
•3 Pitted Natural Delights Medjool Dates (chopped, for a little sweetness in each bite!) ⁣
•Optional: Sprinkle toasted pine nuts or sliced almonds for added crunch⁣, the original version also has cornbread croutons.
⁣
For the Dressing:⁣
•2 tbsp extra virgin olive oil (I used @getgraza drizzle)⁣
•2 tbsp champagne vinegar ⁣
•1/2-1 tbsp fresh lemon juice (depending on how lemony you like it)⁣
•1/4 tsp sea salt⁣
•1/4 tsp black pepper⁣
⁣
𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀:⁣
1.Add the dressing ingredients to a small mason jar, close the lid tightly and shake vigorously. Set aside.⁣
⁣
2.Add all salad ingredients to a large bowl and drizzle with the desired amount of dressing. Toss and enjoy! ⁣
