WHOLE 30 – WEEK 1 UPDATE

All in all, I would say that we had a pretty good first week.  There were plenty of questions from the hubs, asking if he could have this or that.  Most of the time the answer was no, which sort of made me feel like the W30 police!  One area of success was our meal prep.  We took the time to prepare food that would last for a few days, such as our meats and “Paleogasm” Southwest Omelet Muffins.  Yes, I made them again, because they are seriously delicious!  From there, it was easy to add salad, cooked veggies, sweet potatoes, or avocado slices, to make a meal.  One of our new favorite sides is sweet potatoes cut into small cubes, cooked in coconut oil, and sprinkled with sea salt, pepper, and chili powder for a spicy kick.  So yummy!

This week we are going to focus on getting to bed earlier, which is a struggle for us, but needs to happen.  I am going to focus on drinking more water because I feel that lately I am not drinking enough.  One thing we did not anticipate was how tough the weekend would be.  Normally, we try to eat clean at home during the week, and indulge a little more on the weekends.  On Fridays, we usually go out for Tex-Mex and margaritas, and maybe have some ice cream on Sunday evening after dinner.  But, none of that this weekend, and to be honest, we were both kind of grumpy about it.  We didn’t realize how much we look forward to our “treats!”

I am hoping that some of the “magic” will kick in this week and we will both be less edgy.  Already, we are off to a good start with meats and eggs ready to go in the fridge, plenty of fruit and veggies, and our pantry stocked with W30 essentials, like coconut milk and oil, ghee, and cashews.

    Good for you for doing the Whole 30 together. I just finished week 1 and am definitely waiting for the boundless energy to arrive.
