I was inspired this morning by my friend, Arianna, at Lavender and Pink blog. She posted a yummy smoothie recipe that she has been making as part of her clean eating endeavors. So, I wanted to post a recipe for one of my favorite (healthy) sandwiches ever! I have been making it for lunch pretty often for the past couple weeks. It is from the Raw Food Detox Diet by Natalia Rose. I am not currently on the plan, although I have done it in the past. It is a great plan! This is one of my favorite recipes in the book. Its simple, quick, filling, and delicious!
You will need:
Romaine lettuce or baby greens
1 tomato, sliced
1/2 avocado, sliced or smashed with a fork. I like to smash it so it all sticks together better.
2 slices whole grain bread. I use Ezekiel Sprouted Grain Bread
(optional) Other sliced vegetables, such as sprouts, bell pepper, or cucumber
(optional) mustard or raw dressing
When I make this, I always toast the bread first. Then I smash the avocado and add a little fresh ground black pepper, sea salt, and sometimes a little lime. I spread it on the toast and then add my tomato slices. Sometimes I add other veggies, but usually just go with tomatoes. You can put it all together, or eat open-faced. Soooo good!
