Date Snickers Cottage Cheese Ice Cream

Not exactly sure where the viral cottage cheese ice cream trend originated on TikTok but I’m glad I found it! And of course I had to try it! It requires minimal ingredients, is super easy and fun to make. And, you can customize it, depending on the flavors you like best! 

My goal was to use only Medjool Dates to sweeten, for a naturally rich, caramelly flavor!

Most versions I saw used honey or maple syrup to sweeten the ice cream. Natural Delights® Medjool Dates are nutrient dense and fiber rich fresh fruit, making them an ideal choice to use in many recipes. After a few tries I was successful! The key is to first soften and process the dates into a paste, then blend it into the cottage cheese. Watch my tutorial here.

Cottage Cheese Ice Cream with dates    

The beauty of this recipe is that you can make the plain base and experiment with other flavor combos!

(Plain ice cream base is just the cottage cheese, vanilla extract, and dates) I also saw a strawberry and a blueberry cheesecake variety (with fresh berries and graham cracker pieces folded in) that I want to try next. You can’t really mess it up. This won’t replace real ice cream for me obviously but it’s a fun one to try at home when you’re craving something sweet! 

.Tips for Perfect Cottage Cheese Ice Cream on your first try!

  • Use full fat 4% cottage cheese for this recipe for best results. Low fat cottage cheese contains more water and will be more icy/not have the same consistency. 
  • The consistency of cottage cheese can vary (sometimes thicker or runnier) depending on the batch you get. This does not affect the recipe! Comes out great either way.
  • If you can’t have peanuts, use the nuts/nut butter of your choice! Sliced or slivered almonds and almond butter work great too. 
  • Optimal freeze time is 4-5 hours for perfect scoopable texture! More than that and you may have to leave it out a 10-15 mins to soften before scooping.

This cottage cheese ice cream has a satisfyingly delicious “Snickers” flavor AND is protein rich, sweetened with wholesome Natural Delights Medjool Dates! A food processor or high speed blender is recommended for best results for this recipe. I used my Ninja Blender System (food processor bowl). See my video tutorial here

Ingredients

Scale
  • 2 tsp vanilla extract
  • 6 pitted Medjool Dates
  • 16oz container full fat 4% Cottage Cheese (I used Good Culture)
  • 12 tbsp mini chocolate chips (I used Enjoy Life)
  • 1 tbsp peanut butter or nut butter of your choice (I love Georgia Grinders)
  • 1 tbsp peanuts or other nuts of your choice

Instructions

  1. Soak the dates in a cup of hot water for 5 minutes.
  2. Drain and pat dry.
  3. Add dates and vanilla extract to food processor bowl and blend into a paste. 
  4. Remove date mixture from the food processor and set aside. 
  5. Add the cottage cheese to the food processor bowl and blend until smooth, stopping to scrape down the sides of bowl as needed. 
  6. Once you reach the desired texture add dollops of date paste back into bowl with the cottage cheese, evenly spaced. 
  7. Blend again, until the “swirls” of date paste are integrated as much as you’d like into the cottage cheese. (Blend less for a swirl effect, blend more if you want it fully integrated into the mixture) 
  8. Transfer the mixture back into the cottage cheese container or container of your choice. I used a Tovolo ice cream storage container. 
  9. Add 1-2 tablespoons of mini chocolate chips and top with 1 tbsp peanut butter. 
  10. Swirl/fold the ingredients into the mixture with a knife to distribute.
  11. Optional- Add 1-2 tbsp peanuts to the mixture for added crunch
  12. Smooth surface of the mixture with a spatula
  13. Cover and freeze 4-5 hours for best scoop able texture. 
  14. Scoop, serve, and enjoy!
