I woke up yesterday morning in a panic…I had a dream that I had eaten a Red Velvet cupcake from Sprinkles before finishing my Whole 30! I really woke up thinking that I cheated and would have to start again. Not that it would be a horrible thing to have to start again, because I really do feel great. It’s just that I feel I have put forth a good effort to follow the plan as closely as possible, and would like to finish it out! I thought it was funny when they mentioned in the book, It Starts With Food, that people sometimes have “guilty” food dreams. But, it happened to me! The subconscious mind is a powerful thing, I guess. So, in the spirit of cupcakes, (as close as I’m gonna get for right now!) I decided to make a batch of Spinach and Meat Muffins from The Clothes Make the Girl. I love this blog and have referenced it lots during my first W30. There are variations to the recipe, you can add different spices to make different flavors. I have made the plain ones, and this time, I tried the Tex-Mex version. Both are super tasty! I followed the recipe exactly, and added half of a red bell pepper, diced, to the meat mixture. The recipe makes almost 2 dozen, so its a great recipe to make at the beginning of the week. They are perfect to have any time of the day, you can just grab, heat, and go if you are in a hurry. Enjoy! And….I will enjoy a Sprinkles cupcake soon, sometime AFTER I finish my W30, and it will be worth it!
