If I’d known how easy these yummy bites are to make, I’d have made them sooner!
I’ll be the first to admit my baking skills are limited, so these no bake bites were especially appealing to try. I’m excited to share two recipes for this deliciously healthy snack option: Chocolate Almond Coconut & Chocolate Chile Collagen!

Experiment with your favorite spices and flavor combinations. You really can’t mess these up! As long as you have the base of flavorful Natural Delights Medjool Dates + nuts of your choice, you’re good to go.

so, I included red chile in one of the recipes! (It can be omitted if you aren’t into spicy food.) Really though, it just adds enough kick to nicely contrast the sweetness of the dates. I added collagen peptides to the Chocolate Chile bites for additional protein, and you can also add it to the other recipe as well. They’re unflavored, so you won’t even notice a difference in taste!
These brownie-like bites have been a huge hit during active summer days!

No bake, easy, gluten free
Ingredients
Chocolate Coconut Energy Bites
- 1 cup Natural Delights Medjool Dates (pitted)
- 1 cup Almonds
- 1/4 c coconut shreds
- 1/4 c chocolate chips (I used Enjoy Life dairy free chocolate chips)
- 3 tbsp unsweetened cocoa or cacao powder
- 1/2 tsp pure vanilla extract
- 1/4 tsp sea salt
- 1 tbsp water (only if needed)
Chocolate Chile Collagen Energy Bites
- 1 cup Natural Delights Medjool Dates (pitted)
- 1 cup Cashews (salted)
- 3 tbsp Cocoa
- 2 scoops Collagen Peptides
- 1/2 tsp Red Chile (I used Bueno Foods Red Chile Powder)
- 1/2 tsp ground cinnamon
- 1/2 tsp pure vanilla extract
- 1 tbsp water (only if needed)
Instructions
- (same for each flavor, blend separately)
- For each batch, add listed ingredients to food processor.
- Blend about 3-5 minutes until the ingredients are well chopped and a thick “dough” starts to form, You may need to stop the processor occasionally and use a spatula to nudge the dry ingredients to the bottom of the bowl if they are getting stuck or not evenly integrating.
- Tip: Try adding a teaspoon of water at a time if the dough is not coming together as you process it. Do this very slowly and pay attention to how sticky it is becoming. You only want it sticky enough so that they ingredients are starting to bind together. If you over process, the dough will be very messy/sticky to handle and will stick to your hands. It’s still good, just will be much more difficult to handle!
- When the ingredients are well incorporated, remove the blade from the food processor and use the spatula to scrape off any remaining dough.
- Take about a tablespoon of the “dough” at a time and roll into a ball in between your hands. You can make them smaller or bigger if you’d like.
- Set aside on a sheet of parchment or wax paper.
- Repeat with remaining dough.
- Sprinkle with a little shredded coconut or red chile powder to garnish.
- Store the bites in the fridge up to a month or in the freezer if planning to store longer.

I like to store these bites in a large ziplock bag or a food storage container, in layers lined with parchment or wax paper to avoid sticking.
You can also flatten the dough between two sheets of wax or parchment paper to make bars instead of bites.
