Natural Delights Medjool Dates are the perfect base for delicious energy bites! 

Dates are nutrient dense, providing natural sweetness, fiber, and essential vitamins and minerals. If you’re looking for a no bake snack or treat these bites are a must try! Made with only 7 ingredients, they have no added sugar and are gluten free. 

There are plenty of flavor/spice combinations to experiment with when making energy bites. 

You really can’t go wrong! This summer I’m obsessed with all things lemon. The combo of dates, almonds, cashews, fresh lemon, vanilla, and coconut creates a refreshing, flavorful treat. I include a few scoops of collagen peptides for added protein and nutrients. 

Ingredient Notes:

I use fresh, pitted medjool dates, raw unsalted nuts, and unflavored collagen peptides for this recipe for best results!

They’re great for summer activities and back to school snacking/lunchboxes! Energy bites are also fun to make with kids. They love coming up with their own unique flavor combos to try and eating something they made themselves!

Lemon Coconut Energy Bites

These naturally sweet, delightfully zesty lemon bites are a perfectly portable healthy snack! Nutrient dense with collagen peptides for a boost of protein…super easy to make and no baking required!

Ingredients

Makes approx 20 bites depending on the size. You will need a food processor for this recipe. A small ice cream/cookie dough scoop is also helpful in forming the bites! 

  • 1 cup raw cashews
  • ½ cup raw almonds
  • 10 Natural Delights Medjool Dates (pitted)
  • Zest of one whole lemon
  • 2 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • ¼ tsp sea salt
  • Optional- 4-6 scoops unflavored collagen peptides (I used Vital Proteins)
  • Optional- unsweetened shredded coconut (to dip and roll the bites in)

 

Instructions

  1. Add all ingredients to the food processor bowl.
  2. Pulse a few times initially to combine ingredients. (Use a spatula to scrape sides as needed.)
  3. Blend for about 30 seconds to combine further. 
  4. Open lid and check the consistency. The mixture should be slightly sticky and pieces of nuts still visible. 
  5. Be careful not to over-process or it will get too sticky and difficult to roll. If the mixture seems too dry and is not sticking together you can add another tablespoon of lemon juice or a tablespoon of warm water.
  6. Blend in 20-30 second increments until everything is integrated and you reach the desired consistency. (my total blend time was about a minute)
  7. Once the mixture is ready, scoop or spoon and roll each bite and place on parchment paper.
  8. They’re great as is or you can roll them in shredded unsweetened coconut before storing. 
  9. Store in layers (parchment paper in between) in a air tight container or ziplock bag.
  10. Store the bites in the fridge up to a month or in the freezer if planning to store longer. 

Notes

  • I prefer to use unsalted nuts and control the amount of salt by adding it to the recipe
  • If the bites are too sticky when rolling, adding a little water to your hands is helpful.
  • Store bites in a large ziplock bag or a food storage container, in layers lined with parchment or wax paper to avoid sticking.
